Spread a layer of peanut butter on one slice, sprinkle on chocolate chips, bananas, apples, or anything else your heart desires, and place the other slice on top. Finish with a drizzle of maple syrup.

To make a batch, combine 1 cup of peanut butter, 1 cup of white sugar, and 1 egg. Mix until creamy and drop rounded spoonfuls on a parchment paper-lined cookie sheet. Bake at 350 degrees for 6-8 minutes.

Want to ramp up the yum factor? Try adding a few chocolate chips, raisins, or oats to the top of each cookie before baking.
